The gaiwan (or zhong) is an important part of the traditional Chinese tea culture and possibly the most versatile piece of teaware that can be used both as a teapot, and a tea cup. Our gaiwans were produced in Longquan, one of the largest historical ceramic producing areas in China which is especially well-known for its green-glazed or celadon ceramics. The gaiwan consists of a bowl, a lid with a big knob and a saucer that sits comfortably in the palm. The bowl and the lid are adorned with hand painted bamboo, lotus flowers and other pictures with Chinese motives. Before brewing warm your gaiwan with hot water. Add tea leaves and pour hot water in circular motion along the edges. When the brew is ready drink the beverage directly from the bowl or decant it to the pitcher through a small opening between the lid and the edge of the cup. Gaiwans are great for tea tasting. The Chinese bowl originated from Ming Dynasty is especially good for preparation of delicate green and white teas, oolong, puer. The porcelain walls of the lidded teacup absorb the heat cooling the tea while it steeps. The cup reveals the nuances of tea aroma and besides allows tea lovers to view the process of brewing. It is less suited for black teas as they require very hot water to be properly prepared. Japanese green teas and roоibos may also pose a problem as their leaves are too small to decant the liquor accurately.
